Artisan Baking -- week 1

It has been two years since I wanted to take an Artisan Baking course. But the course eluded me for one reason or another and this week, I finally managed to get the last spot in this two week course (2 Saturdays to be precise)... 12 hours of fantastically good Artisan baking. Umm-um!

Our instructor, Chef Tara Pitre, explained artisan baking as the art of baking bread "by hand". Today, there are many modern contrapations that will help the avid baker bake their bread without much fuss but truly artisnal baking will avoid the use of any machines. That having been said, it's pretty hard work :).
